This course covers the entire spectrum of traditional Japanese cuisine and sushi making in an intensive, highly focused, twelve-week period. The Intensive program is a professional certification program that prepares student to become professional chefs upon the completion of the program.

California Sushi Academy is registered by the State of California Bureau for Private Postsecondary and Vocational Education.

This course covers an in-depth study of the essentials of preparing, presenting, and serving roll and nigiri sushi and sashimi as well as the principles of wide range of Japanese dishes. The topics besides sushi and sashimi making include but not limited to Japanese culinary history and culture, how to handle and maintain knives and utensils, how to make the best use of seasonal seafood and vegetables, Japanese basic sauces and stocks, kaiseki-dishes, popular Japanese home cooking dishes, and restaurant business management concepts.

The course also includes sake-tasting class and certification exam, HACCP (Hazard Analysis and Critical Control Point) lecture and certification exam, and macrobiotic cooking course as well as field trip to fish market and various factories, etc.

This course examines the fundamentals of sushi making and traditional Japanese cuisine in a concentrated five-day period. With smaller class size than the intensive course, this course is designed to cater the specific needs of the students with some professional culinary backgrounds and ambition to incorporate their very own “Japanese twist” into their future menus as well as those who plan to make a career change into the world of Japanese cuisine.

California Sushi Academy is registered by the State of California Bureau for Private Postsecondary and Vocational Education.

This course is designed to fulfill the specific short-term goals of the participants with strong emphasis on sushi and sashimi preparation and the fundamentals of practical Japanese culinary techniques that can be applied immediately at chefs’ kitchens.

CSA is accepting enrollment for the 5-Day Sushi Chef Course every week (except Thanksgiving, Christmas, and New Year weeks).

The class will be taught Monday-Friday from 1:00pm to 5:00pm.

This course is a hands-on class for anyone with love of sushi and big appetite. Come as individuals or groups for fun Saturday morning of sushi making. Learn how to make cucumber rolls, California rolls, rainbow rolls and spicy tuna hand rolls. Best part is that you get to enjoy them all at the end of the class. Please bring your own apron. Everything else is rented with no charge.
The course covers how to prepare sushi rice, how to make cucumber roll, California roll, rainbow roll and spicy tuna hand roll.

SATURDAY One-Day Basic Sushi Class ($80.00)

10:30a.m.-1:00p.m. every Saturday, except last Saturday in January, April, July and October (2.5 hours)

$80.00 per person for Saturday day time class.

* Rescheduling must take place before 5pm, Thursday of the reserved class. Friday rescheduling results in $10.00 rescheduling fee.

This course is a hands-on class for students who have already taken a One-Day Basic class. The class covers more technical materials ranging from how to prepare fish for sushi and to how to make nigiri.
The course includes fish cutting practice, how to make nigiri, and special rolls.
